Yellow noodle is made from oil, water, flour and salt, and the long, uncut noodles are considered a household staple. Flat yellow noodle is made with wheat flour, eggs, lye water (sodium carbonate and potassium carbonate) and salt which makes it high in carbohydrates almost the same as traditional pasta. Mostly sold pre-cooked and coated in oil.
